DESCRIPTION OF ACTION

Politics, practices and the transformative potential of sustainable diets. The POPRASUS research consortium analyses how the promotion of pro-environmental behaviour and sustainable diets has become part of the agenda of environmental and food policies, and how this is applied in an institutionalised setting of mass catering and among forerunner groups in environmentally sustainable food consumption. The multidisciplinary consortium brings together environmental and health policy researchers as well as researchers from the fields of consumption, food and environmental research. The project promotes sustainable school food and seeks to increase the share of vegetarian food and climate-friendlier protein sources and to reduce food loss. The project works together with home economics teachers in schools, and it has organised food juries and protein source tasting events and developed new recipes during home economic lessons with schools.
